Ingredients (Serves 2–3):
- 2 medium sweet potatoes, peeled and cubed
- 1 tbsp olive oil
- 1/2 tsp cumin
- 1/2 tsp smoked paprika
- Salt & pepper to taste
- 1 can (15 oz) black beans, rinsed and drained
- 1/4 cup red onion, finely chopped
- 1 clove garlic, minced
- Juice of 1 lime
- 6 corn tortillas
- 1 avocado, sliced
- Fresh cilantro, chopped (for garnish)
- Optional: Greek yogurt or vegan sour cream
Instructions:
- Preheat oven to 400°F (200°C). Toss sweet potato cubes with olive oil, cumin, paprika, salt, and pepper. Spread on a baking sheet and roast for 25–30 minutes until tender and golden.
- In a skillet, sauté red onion and garlic for 2 minutes. Add black beans and a splash of lime juice. Warm through for 5 minutes.
- Heat tortillas in a dry skillet or microwave.
- Assemble tacos: layer sweet potato, black beans, avocado slices, and a dollop of yogurt or sour cream.
- Garnish with cilantro and extra lime juice if desired.
