Protein-Packed Sweet Potato & Black Bean Tacos

A delicious plant-based meal packed with fiber, protein, and essential nutrients — perfect for hormone health and fertility support.


Ingredients (Serves 2–3):

  • 2 medium sweet potatoes, peeled and cubed
  • 1 tbsp olive oil
  • 1/2 tsp cumin
  • 1/2 tsp smoked paprika
  • Salt & pepper to taste
  • 1 can (15 oz) black beans, rinsed and drained
  • 1/4 cup red onion, finely chopped
  • 1 clove garlic, minced
  • Juice of 1 lime
  • 6 corn tortillas
  • 1 avocado, sliced
  • Fresh cilantro, chopped (for garnish)
  • Optional: Greek yogurt or vegan sour cream

Instructions:

  1. Preheat oven to 400°F (200°C). Toss sweet potato cubes with olive oil, cumin, paprika, salt, and pepper. Spread on a baking sheet and roast for 25–30 minutes until tender and golden.
  2. In a skillet, sauté red onion and garlic for 2 minutes. Add black beans and a splash of lime juice. Warm through for 5 minutes.
  3. Heat tortillas in a dry skillet or microwave.
  4. Assemble tacos: layer sweet potato, black beans, avocado slices, and a dollop of yogurt or sour cream.
  5. Garnish with cilantro and extra lime juice if desired.
