Ingredients:

  • 1 cup dry lentils
  • 6 cups low-sodium vegetable broth
  • 2 cups fresh spinach
  • 1 onion, diced
  • 2 carrots, diced
  • 2 celery stalks, diced
  • 1 tbsp olive oil
  • 1 tsp cumin, salt, pepper

Instructions:

  1. Heat olive oil in a pot, sauté onion, carrots, and celery for 5 min.
  2. Add lentils, broth, and seasonings. Simmer 25–30 min until lentils are tender.
  3. Stir in spinach before serving.
