Ingredients:
- 1 cup dry lentils
- 6 cups low-sodium vegetable broth
- 2 cups fresh spinach
- 1 onion, diced
- 2 carrots, diced
- 2 celery stalks, diced
- 1 tbsp olive oil
- 1 tsp cumin, salt, pepper
Instructions:
- Heat olive oil in a pot, sauté onion, carrots, and celery for 5 min.
- Add lentils, broth, and seasonings. Simmer 25–30 min until lentils are tender.
- Stir in spinach before serving.
